Crispy cod with aubergine fries
Our health-ified fish and chips. To keeps things even lighter you can bake the fish in the oven, alongside the aubergine fries. It’s worth patting any excess oil from the aubergine too as they are a very porous vegetable, and tend to soak up everything they touch. For the crushed peas simply bring some petit pois to the boil, drain and give them a good mash with a fork.
// SERVES 2 //
200g fish fillet, such as cod (or use hake, pollock or haddock)
75g rice flour or plain white flour
pinch cayenne pepper
1 egg
80g panko breadcrumbs (or use sourdough or brioche breadcrumbs)
groundnut oil, for shallow frying
sea salt and freshly ground black pepper
lemon wedges, to serve
crushed peas, to serve
